Sprouts have
a higher biological efficiency value than mature plants and whole seeds,
raw or cooked. Less food is required, yet more nutrients reach the blood
and cells. Sprouts also have a regenerating effect on the human body
because of their high concentration of RNA, DNA, protein and essential
nutrients which can be found only in living cells. (Synthetic supplements
are not living food.)
Alfalfa sprouts are one of our finest food sources of saponins which lower the bad cholesterol and fat but not the good HDL fats. Studies have proven their benefit in arteriosclerosis and cardiovascular disease. Saponins also stimulate the immune system by increasing the activity of natural killer cells such as T- lymphocytes and interferon. Sprouts also contain an abundance of highly active antioxidants that prevent DNA destruction and protect us from the ongoing effects of aging. May 5, 2008 - Yet another study has been released exhibiting the cancer-preventative potential of broccoli sprouts as part of a healthy diet. Recently, researchers from Roswell Park Cancer Institute and Johns Hopkins School of Medicine published results in the journal Cancer Research showing that high concentrations of the long lasting antioxidant sulforaphane, from broccoli sprouts, greatly reduced the incidence of bladder cancer in laboratory animals. This latest research adds to the list of more than 700 published studies examining the positive health effects of these functional foods, broccoli and broccoli sprouts. The scientific community worldwide continues to produce evidence that the natural antioxidants, sulforaphane and SGS, found in broccoli and other cruciferous vegetables, and in especially high levels in three-day-old broccoli sprouts, detoxify carcinogens and can help the body fight off and prevent cancer-forming agents. Broccoli sprouts have also been found to protect against other chronic diseases. In 1997 scientists found the highest concentrations of this antioxidant in carefully selected and grown broccoli sprouts. This led to the development of BroccoSprouts®, delicious fresh sprouts that have a concentration of the antioxidant SGS twenty times that of mature broccoli and have the potential to increase the body's ability to prevent cancer. Alfalfa, radish, broccoli, clover and soybean contain concentrated amounts of phytochemicals (plant compounds) that can protect us against disease. Plant estrogens in these sprouts function similarly to human estrogen but without the side effects. They increase bone formation and density and prevent bone breakdown (osteoporosis).
